Opie is a GUI environment that works on top of linux and w/ qt, so you will not have to remove the existing OS on the phone.
Cyph's package allows the user to easily swap between the Opie and e680 environments, there is another package out there for the e680 that will work, but requires you to shutdown currently running e680 apps to get it to work properly, so for starting i wouldn't recommend it. Also, there appears to be a newer version of Opie that is being built based on the OpenEmbedded environment, but for starting out cyph's first package seems to be the best bet right now.
Also, currently Opie does not have a GSM/phone app, so you do have to switch back to the standard phone environment to use your e680 as a phone (again, this is where cyph's package comes in handy).
Sound does work, but because the native soundmanager is running, sound from Opie is not 100% functioning. When I use the media player I can get sound but there are some tricks to getting it to work (check out the posts in the development section).
If cyph's package is not available from the link above, try this one: http://www.dewmill.com/linuxphone.html From what I remember cyph included full installation instructions w/ his package and setting it up is a snap and can be done regardless of your PC's OS (i.e. linux not reqired...)
