do you mean you have a choice of <Turkish> language in [Language Setup]?
in case you flash your phone with different firmware you will surely loose Turkish language if the new firmware does not have it included.
Fortunately there's an EZXcodec application - search the forum for it. This application (being installed on your PC) can disassemble and reassemble firmwares and thus you gain the ability to exctract and modify so-called CGs (Code Groups). One of the CGs (CG41 as far as I remember) is responsible for the language - it relates only to the languages that do not have special characters (different from normal latin layout) because if the onscreen keyboard that you use in Turkish is different from the one for English you would also need to update iconres.ezx file from CG34.
So it's quite complicated and you better PM Eakrin asking whether there's a support for Turkish in any of the firmwares with multilingual packs - since he is the guy who has been compiling them (he can also advice on what files particularily you may need to port your language from your current FW into another).
If there is no FW that supports Turkish, then you need to:
- backup your current FW from the phone
- disassemble it with EZXcodec app
- download newer FW and disassemble it in EZXcodec too
- amend newer FW as appropriate adding needful files from your FW and reassemble modded FW
- then flash this modded FW into the phone
